Spicey pheasant fajitas

Follow this recipe for spicey pheasant fajitas and treat the whole family to a vibrant midweek meal that will delight their taste buds!

Ingredients

  • 4 large pheasant breasts, finely sliced
  • 1 red onion, finely sliced
  • 1 red pepper, sliced
  • 1 green pepper, sliced
  • 1 red chilli, finely sliced (optional)

For the marinade

1 heaped tbsp smoked paprika
1 tbsp ground coriander
Pinch ground cumin
2 medium garlic cloves, crushed
4 tbsp olive oil
1 lime juiced
4-5 drops Tabasco sauce

To serve

6 medium tortillas
Mixed salad
Fresh salsa
Fresh guacamole
Sour cream with chives
Grated cheddar cheese

Cooking Time:

Method

Mix smoked paprika, coriander, cumin, garlic, lime juice, tabasco and olive oil together and season with salt and pepper.

Finely slice the pheasant breasts, red onion, red and green pepper and chilli.

Add them to the marinade and coat well. Let rest in marinade for 10 mins.

Heat up a large pan or griddle, when hot add the mixture and turn with tongs until pheasant is cooked through.

Warm flour tortillas, by wrapping in foil and baking in oven at 180c for 10 mins.

Get grated salad, cheese, guacamole, salsa, and sour cream ready.

Serve in big dishes on middle of table for the family to dig in and make their own spicy pheasant fajitas. ENJOY!
