Grouse and wild boar sausages with blackberry and red wine casserole is a real treat, the blackberries are a perfect match to the flavourful mixed game sausages.
Ingredients
- 6 grouse fillets
- 6 slices of pancetta
- 100ml of red wine
- 2 pinches of onion salt
- A slug of olive oil
- 3 tbsp of vegetable stock
- 1 generous tbsp of bramble jelly

Method
- Put all the ingredients in pan (except the cornflour and grouse fillets) and heat until the bramble jelly has melted
- Mix the cornflour with a little water to make a smooth paste. Tip in the cornflour mixture and stir until the sauce thickens. Remove from the heat.
- Wrap the grouse fillets in pancetta
- Heat the olive oil in a pan on a medium high heat
- Pan fry the grouse fillets for about 1 ½ minutes each side
- Serve with the sauce and your choice of seasonal vegetables
